Weight lose question for real fitness pros?

I've struggled with my weight all my life and i've found the healthier i've gotten over the years, only diet soda once in a while, rice milk instead of regular, ground turkey instead of ground beef, etc and working out, I've found that my weight has just continuously gone up, up and up! 2 yrs ago i got a job that i have to commute about an hour to and didn't work out continuously until this yr. Now that I've started again (June), I've found that i can only drop 8lbs and that's it. I've watched myself have 1 meal for a whole day not even fast food but a plate and a half of indian food and the next day my weight was up 2 whole pounds!!! So, i'm at the brink of giving up. I look at people eating whatever they want and I have to have an apple for breakfast, a small lunch and nothing for dinner and still not losing weight. YOu are probably thinking i don't work out hard enough but i do high intensity workouts like Jari Love and Kathy Friedrich and FINISH the 1HOUR plus workouts. I'm a sweatball when i'm done. I'm 33 BTW I'm working my heart out, sacraficing and getting no results i don't know what to do. My doctor said my thyroid is fine but i don't think so, i did some drastic dieting in my teens that could have slowed down my metabolism but it shouldn't be this bad. 2 Meal replacements a day with one meal used to work but now that doesn't. What gives? Anyone had this problem or know someone who has and have they found a solution. Only knowledgeable answers please.
